Parnips are a favorite winter vegetable that can be stored like carrots. They are delicious steamed until tender and then sauteed in butter. Or cook and mash them with potatoes (we like this combination better than plain parsnips). They can also be added to soups and stews. 

Parsnip 'Hollow Crown' has large, white roots that grow up to 15" long. They are sweet and flavorful. Latin name: Pastinaca sativa.

Sowing Parsnip 'Hollow Crown' Seeds

Sow parsnip seeds outdoors 3 weeks before the last frost date. Soak overnight, then sow 1/2" deep and 4" apart in rows spaced 16" apart. Keep the soil surface moist until germination, which can be very slow. Full sun.
