Campanula rapunculus is a biennial with soft leaves that can be used in spring salads. The crunchy, white taproot (harvested in the fall) tastes like a mild radish. It blooms the second year with lavender-blue, bell-shaped flowers.
Campanula rapunculus is native to Europe. Also known Rampion or Rapunzel (from the fairy tale). It likes full sun in cool climates and part shade in hot climates. Self-sows. Hardy in zones 4-9.
