Rosita eggplant is one of the most beautiful varieties we have ever grown. The teardrop-shaped, medium-size fruits are a lovely shade of lavender-pink. They grow to 8" long and 4" wide. The white flesh has a mild flavor.

Rosita is not as productive as some other varieties, but it is generally satisfactory. It was developed in the 1940s by the Puerto Rico Agricultural Experiment Station.

Sowing Eggplant Seeds

Start eggplant seeds indoors 6-8 weeks before the last frost date. Sow 1/4" deep. Transplant outside 2 weeks after the last frost date. Full sun. Spacing 16".
