'Hollow Crown' parsnip has 12- to 15-inch, creamy white roots with a sweet and nutty flavor that improves with autumn frost. They can be left in the ground over winter with a thick layer of mulch, or stored in a root cellar for up to 6 months.

Parsnips are very versatile in the kitchen. We like to steam and mash them along with potatoes. They are also delicious steamed until fork-tender, then sauteed in butter. Parsnips can be added to stews and pot roasts, or roasted along with other root vegetables.

This wonderful heirloom has been grown in gardens since the 1820s.

Sowing Parsnip Seeds

Sow parsnip seeds outdoors in early spring in deeply worked soil. Sow 1/2" deep, 1" apart, and keep moist. Thin to 4-6" apart. Slow to germinate. Full sun.
